Water film chilling
The water film chilling process is based on the evaporation of moisture from an intact water film. The accurate control of moistening techniques and air speeds during water film chilling contributes to the maintenance of the chilling parameters required and to final yield and product presentation.
Summary of the water film chilling benefits:
- High yield
- Quick chilling
- Optional use of lower temperatures to chill, as sprays are sited outside the chilling room
- Less risk of product parts freezing
- Less drip and fewer aerosols
