With its eye on the automatic deboning of legs in-line Stork has developed for its ACM system deskinning, deboning and harvesting modules both for thighs and for drumsticks.
Thigh deboning
The thigh deboning system allows you to debone either left, right or both thighs. The following modules are available:
- Whole leg deskinning module: removes the skin from anatomically cut legs
- Thigh deskinning module: removes the thigh skin from anatomically cut legs
- Thigh deboning module: debones the thighs prior to manual or automatic thigh meat harvesting
- Thigh meat harvesting module: automatically removes the detached thigh meat from the bone joint
Drumstick deboning
The drumstick deboning system is installed after the drumstick cutter in an ACM portioning system. It consists of the following modules:
- Drumstick deskinning module: removes the skin from the drumstick
- Drumstick deboning module: debones the drumstick prior to manual or automatic drumstick meat harvesting
- Drumstick meat harvesting module: automatically removes the detached drumstick meat from the bone joint
Summary of the in-line thigh/drumstick deboning benefits:
- Great processing flexibility thanks to modular construction and use of the Stork shackle
- Easy to clean
