In-line whole leg deboning

Leg meat, whether skin on or skin off, bone in or bone out, lends itself particularly well for processing into a wide range of end products. To meet changing customer demand, Stork has launched a modular system for the deboning of whole legs.

Overview of the line

The in-line whole leg deboning system consists of the following modules:

  • Whole leg deskinning module: removes the skin from anatomically cut legs
  • Sinew cutter: reduces the sinew content in order to facilitate further processing steps
  • Manual work station: thigh bone is cut loose manually
  • Thigh bone removing module: removes the thigh bone
  • Drumstick deboning module: debones the drumstick prior to manual or automatic meat harvesting
  • Leg meat harvesting module: automatically harvests the leg meat
