Electrostimulation: RapidRigor
Electrostimulation is not a new concept. Thorough-going research into the complexities of the application of electrical current and its interaction with plucking, chilling and deboning times, has been done by Stork´s team of meat technologists in cooperation with prestigeous research institutes.
In-line electrostimulation
RapidRigor is an in-line system, where pulses of electrical current are applied to the carcass for a set period of time after plucking to accelerate the removal of energy from muscles in a controlled way.
Summary of the RapidRigor benefits:
- Tenderness improvement typically equivalent to some four hours maturation off-line
- Saving of time
- No negative effect on plucking results
- No negative effect on carcass quality
