Ducks/geese

In general the technologies, know-how and experience applicable to broiler processing have also been employed for the processing of ducks and geese.

Different plumage

Special systems have been developed though for the plucking and scalding operations because the plumage of waterfowl differs materially from that of broilers or turkeys.

The evisceration process for ducks is now fully automatic as opposed to that of geese. The evisceration of liver geese is still a largely manual operation. This owes its origin not only to the very different shape of the birds, but also to the special care required during the harvesting of livers. Stork has developed process technologies aimed at facilitating this manual operation.
