Electrostimulation is not a new concept. Thorough-going research into the complexities of the application of electrical current and its interaction with picking, chilling and deboning times, has been completed by Stork's team of meat technologists in cooperation with prestigeous research institutes.
In-line electrostimuation
RapidRigor is an in-line system, where pulses of electrical current are applies to the carcass for a set period of time after picking to accelerate the removal of energy from muscles in a controlled way.
